Yesterday (Sunday) was such a stormy day! Hours upon hours of thunder, lightning, and rain… it was a delight! I’m one of those oddballs that actually enjoys a bit of humidity, so I loved being able to actually feel the dampness in the air from the storms. I was able to step outside at juuuuust the right moment to catch this beautiful rainbow later on in the evening. I was grinning from ear to ear as rain continued to drizzle down into my eyeballs while admiring this beautiful sight! 🙂
Yesterday was also one of those rare days in which I had a hankering to cook. I often have a lot of difficulty motivating myself to cook… well… anything! It’s a rather unfortunate task initiation issue I have, but I had one of those lovely days full of home-making vigor!!! I have noticed I particularly enjoy making crockpot meals and baking. So, that’s what I did! I made Sweet Potato Cornbread and Slow Cooker Chicken and Bean Burrito Bowls, which were both delicious! Honestly, Jonathan does so much of the cooking in our household that I’ll sometimes feel a little embarrassed by it (as incredibly grateful as I am that he’s a good cook). I only feel a tad embarrassed because I thoroughly enjoyed cooking and baking when I was younger, specifically when I was a teenager! In fact, the group I was a part of in my senior year of high school won the “Iron Chef” competition in our home economics class. I think I still have the newspaper clipping and printed out “award” from our teacher somewhere! Hmm… perhaps I can find more ways to bring enjoyment and mindfulness to cooking again. A future endeavor I look forward to!
I feel grateful for…

- … my bursts of motivation (for anything, frankly) when I have them.

- … the smells of dinner being made, especially when walking back inside from outside.
- … being done setting up this dang website. 🙂
